Hello my name is Sayuri and this is my blog. Like I said in the last blog this month (March) I going to be about the celebration of it's beautiful heat. Basically the great treats you get to make then ingest due to the temperature, but because that doesn't seem to be happening any time time soon I'll improvise. Here we go. This week we will be making: Chilli Chicken ! To try and capture the heat we SO crave right now!(Shout out to all my South Asians right now, I am so very jealous of your warm countries and you are going to love this recipe, probably not for those vegans though)

Chilli Chicken:

  • 250 grams boneless chicken breast (cut into 1 inch cubes)
  • 1 egg white
  • 1 tsp salt
  • 4 tsp red chilly sauce
  • 2 -3 tsp cornflour
  • 1 tbsp soy sauce
  • 2 tbsp ketchup
  • 1 tsp white vinegar
  • 2 tbsp oil
  • 1/2 tsp ginger paste
  • 1 tsp garlic paste
  • 1 big onion sliced vertically
  • 1/2 cup capsicum (cut into big cubes)
  • 1 -2 green chillies
  • Green coriander and green onion for garnish
  • Oil for frying

1. Put egg whites, 1 tsp of salt, 2 tsp red chilli sauce, 2-3  tsp cornflour in a bowl and chicken in a bowl then mix well. Keep for 10-15 minutes.
2. Put 2 tsp red chilli sauce, soy sauce, ketchup, and white vinegar in a bowl and mix. Leave for later
3.In a pan heat 2 tbsp oil and add garlic and ginger paste. Fry until golden-like and then add the sliced onion and capsicum cubes and slit green chillies. Stir fry on high flame for 2- minutes. Do not over cook the vegetables. They should be crunchy.
4. Lower the flame and add the sauce mixture and 1/4 cup of water to the chicken. Mix well
5. When thick and sort of dry, stop the flame and put onto a serving platter.
6. With green chopped coriander and green onion, garnish.
7.Serve hot and enjoy!:)
